Steamed Bok Choy: Baby Bok Choy, Sugar Snaps, & Garlic en Papaillote



This dish is prepared en papaillote which is french for "in parchment" or in this case aluminum foil. En papaillote is basically a steaming technique which is great to use with subtle flavored foods like fish and vegetables. Well, en papaillote got me thinking of a pouch... which brought my mind to a kangaroo...which directed my thoughts toward the wallaby, Indy that is loose in our town.

Indy had been rescued from upstate by a local family. Indy was living on their farm when deer got into the yard and scared him. He ran off the property and has been living in the woods near our high school for the last two and half weeks. Kids regularly spot him during recess. I think he is trying to get a free lunch, or he just likes the sounds of kids playing.
But, no one seems to be able to track Indy down. We have had people on horse back go through the woods and groups of residents blanket areas where he has been spotted. No luck at all!

Wallaby watching has become an obsession in my town. I even keep Indy's owner's phone number on my cell phone, so if I spot him while walking my dog in the woods I can alert them.
I was even checking around in the woods of my yard when I photographed this dish. The high school is just down the road from me, and you never know if a wallaby would enjoy steamed baby bok choy, sugar snaps and garlic seasoned with orange zest and mint.

My family sure did. I was relieved because sometimes steamed recipes, which are very healthy don't always have much flavor... but this was bright, light and aromatic.
I served the papillote with Sesame and Bonito Flaked Crusted Tofu which went very well with the Asian vegetables in this dish. I think fish or a light chicken recipe would also work terrifically with this steamed Bok Choy dish... and if you are lucky Indy may show up for dinner... one can only hope!

PS: We have been instructed that if Indy does show up in our backyard to invite him in... and feed him wheat thins, almonds, rice cakes, apples, lettuce, dry maple leaves and/or sweet potatoes until his owners can come pick him up.
